About the Company

Starting out as Hercules Gourmet Desserts, the company was formed as an offshoot of Villa North Fine Catering to meet the needs of the catering company’s growing demand for its Sweet Potato Cheesecake. From the cake’s success grew a line of ten different cakes, including a sugar-free version of the sweet potato cheesecake. Over the last decade Hercules Gourmet Desserts has sold thousands of cakes in various sizes, both directly to customers and wholesale to restaurants and retail operations in Chicago and Philadelphia.

The second product that we developed was inspired by our years in the restaurant industry and our fondness for ethnic cuisine; more specifically our love of Jamaican food. Over the years we noticed a lack of ready-to-eat products specifically geared to the niche market of Jamaican cuisine. Other cuisines like Mexican, Indian and Chinese are highly represented in supermarkets nationally, often having their own dedicated aisle in many retail operations.

The demand for Jamaican food, particularly in the Chicagoland area is great. In Chicago alone, there are 50 restaurants around the city, specializing in Caribbean cuisine. Our BAMBOO Jerk Chicken dinner is a ready-to-eat version of the classic jerk chicken meal sold in most Jamaican restaurants, consisting of two pieces of jerk chicken (drumstick and thigh), rice and peas, cabbage and carrots and plantain.

Fellow Northwestern University Alumni Graduate, And  Hercules Gourmet Foods Founder plans to continue to develop underrepresented food products, focusing on all natural, gluten-free and preservative free ingredients.
