Gabriel Poblete was born and raised in Peru. Due to his family’s missionary background, he was able to travel throughout all of South America and taste different cuisines. He was always fascinated how Peruvian food influenced every cuisine in South America. At 18 years of age Gabriel came to USA and lived in DC area which has the largest concentration of Peruvian population. As a hobby, Gabriel went around tasting food at numerous small Peruvian spots in the area. However when Gabriel moved to the Chicagoland area at 23 he couldn’t find so many Peruvian restaurants as in DC. That’s when he decided to bring affordable Peruvian food to Chicago! Chopo Chicken is known for its Peruvian street style food with the integrity of all staple Peruvian condiments such as aji verde & aji amarillo.
